Greek Style Garbanzo Bean Salad

I wanted to make another easy side dish, I thought why not make a Greek Style Garbanzo Bean Salad. Now with that said the ingredients are simple:

  1.          Three cans of drained Garbanzo Beans
  2.          One British cucumber (chopped into quarter inch size)
  3.          Kalamata Olives (chopped)
  4.          Feta Cheese
  5.          Olive Oil
  6.          Fresh Lemon Juice
  7.          Honey
  8.          White wine vinegar
  9.          Parsley
  10.    1     . Celery
  11.          Garlic powder
  12.          Red Bell Pepper ( diced into small ¼ inch sizes)
  13.           Salt to taste

I prefer a lot of Feta Cheese and in a block that I can crumble. First, I make the dressing initially a lot of olive oil and a little lemon juice with the garlic powder I emulsify the ingredients until all is blended together then I marinate the bell peppers and the cucumbers.

In the meantime, blend the celery, parsley, garbanzo beans, chopped Kalamata Olives, and crumbled Feta Cheese.

Make sure that the marinade is not too acidic, add more olive oil and honey. Then toss the salad and you do not want the dressing to be too liquid, so drain off and save for another salad later. Alternatively, just get rid of the excess.

Some people like to add tomatoes and red onions, I did not want to do that this time. Place in the Fridge for flavors to blend. Keep in mind the salt will remove some of the liquids from the Cucumbers and the Bell Peppers so when you are ready to serve it  in a bowl be prepared to remove the excess liquid again. Hence the extra Feta Cheese is critical to absorb some of the liquids. This  salad is great at room temperature. So, a few hours before your guests arrive just pull it out of the fridge

Debe Maxwell, CRS  sometimes you can add tomatoes with it and even green or any kind of onion you prefer... I am not a big fan of raw onions....so when I do it I saute' it...Enre
