Cheese Tortellini with Peas and Bacon Recipe

Ingredients:

  • 1 lb. cheese tortellini
  • 6 slices bacon
  • 2 cloves garlic, minced
  • 1 1/2 c. frozen peas
  • 1 c. freshly grated Parmesan, plus more for serving
  • Freshly ground black pepper

 

Directions:

  1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to pot.
  2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy, 6 minutes. Transfer bacon to a paper towel-lined plate and let cool, then chop.
  3. Drain half the fat from the skillet and add garlic. Cook over low heat until fragrant, 1 minute. Add peas and stir until coated, then add cooked tortellini, bacon, Parmesan, and 1/4 cup pasta water.
  4. Garnish with Parmesan, season with pepper, and serve.

Hello Will - peas are not one of my favorite foods and not typically a big fan of bacon but there's something about the combination with pasta that makes it appealing.  Time for comfort food.

This does look like comfort food. Great pasta is hard to beat although, I don't eat much of it these days.  Thanks for sharing this recipe with us, Will.

The finished dish looks very appetizing, Will... but it's one I won't be making any time soon... not a fan of cheese tortellini and I almost never eat bacon.... I always find that the taste of bacon seems to overwhelm a dish.
