Food gives you energy, or should do, you may find at times it doesn't and what you are eating is making you feel sick and tired. I generally eat pretty healthy, little processed box food, and generally make my own salad dressings and meals so I know what is in the food. Now, I do admit, like everyone else, I do stray from time to time with a pizza, hoagie etc. But overall, I think about how food is making me feel.
Our business is hard enough without what you are eating making you tired and brain sluggish.
So this morning I left a comment on a post by Brian England that was inspired from Barbara Todaro where he showed a hamburger on cloud bread. Now I have heard of cloud bread but never made it, this looked pretty good and I will have to try some recipes. But, I mentioned that I have made a few times a Paleo bread and Brian asked if I would post the recipe.
This comes up a bit like a cornbread texture, almost like a very firm cake, but it is gluten-free, grain free and packed with nourishing fats, including omega-3s, protein and fiber and it is very satisfying. It is not light and airy,but more solid. I printed this off the internet, I believe I found it through Pinterest but cannot tell you where I got it other than that. It tends to look like a banana nut bread, whilst it rises a little it is pretty solid.
Ingredients:
2 cups almond meal
2/3 cup tapioca starch/arrowroot flour
2 tablespoons flax/chia meal
1 tablespoon chia seeds
1 teaspoon bicarb soda
Pinch of salt
3 eggs
1/4 cup coconut milk, canned or homemade
1 tablespoon maple syrup
1/4 cup coconut oil
1 teaspoon apple cider vinegar
Method:
Preheat oven to 350 degrees fahrenheit and line a loaf tin with parchment paper
Combine the dry ingredients in one bowl and whisk the wet ingredients together in another bowl
Combine wet and dry ingredients together and pour into lined loaf tin
Place the loaf tin in the oven for 30-40 minutes or until golden brown on top and cooked through. Place a skewer in the centre of the bread and when skewer comes out clean, the bread is ready.
Serve warm or toasted with your favourite topping.
It is really good warm from the over, although it is a little crumbly. I have not tried it toasted though.
