Pumpkin Pie Pancakes
- 2 cups all-purpose flour
- 1 Tb. baking powder
- 2 tsp. Pumpkin pie spice
- 1 tsp. Cinnamon
- ½ tsp. Salt
- 1 ½ cups milk
- 1 cup Simple Truth Organic™ Solid Packed Pumpkin
- ⅓ cup brown sugar
- 2 large eggs
- 2 Tb. vegetable oil
Sift together the flour, baking powder, pumpkin pie spice, cinnamon and salt into a large bowl. In a separate bowl, whisk together the milk, pumpkin sugar, eggs and oil until smooth.
Pour the wet ingredients into the flour mixture and stir until just combined.
Heat a griddle to medium heat and coat with cooking spray. Ladle out ¼ cup batter per pancake and cook until bubbles form around the edges. Flip and cook until browned on the bottom. Repeat with remaining batter.
Serve immediately with maple syrup, butter and pecans.
