Mexican Casserole
Ingredients:
1 pound ground beef
1 can cream of chicken soup
1 can Rotel
1 can refried beans
1 can corn (drained)
1 onion diced
1 package taco seasoning
1/2 cup water
6 flour tortilla's (more or less depending on size of the tortilla's)
Grated cheese
Directions
Pre heat over at 350 degrees
Spray an 8 x 12 pyrex dish with pam
Cook the ground beef with diced onion, drain well
Add taco seasoning and 1/2 cup of water and cook about 2 minutes
Add remaining ingredients and cook about 3 - 4 minutes
Cover bottom of baking disk with tortilla's
Add 1/2 of the beef mixture
Cover with grated cheese
Add second layer of tortilla's
Add remainder of beef mixture
Cover with grated cheese
Cover dish with foil and bake for 30 minutes
Remove foil and bake an additional 10 - 15 minutes
Let sit 10 - 15 minutes before serving
