Not many people think spinach and cream cheese go together well, but they do. When I was on Cape Cod..years ago, I went out for breakfast and the restaurant had a spinach and cream cheese omelette special. Just the combination interested my palette. I now make it on a regular basis and thought I would pass it along.
I'm on a food/recipe kick lately, I must be in the mood to cook. I will post more related *real estate* issues soon too.
2 Tbs Butter or Margarine
2 Eggs (scrambled)
A pinch of nutmeg
4 oz Philadelphia Cream Cheese (sliced)
¼ Cup Fresh Spinach or ½ cup frozen (prepare as stated on box)
½ Cup Diced Tomato (optional)
Salt and Pepper to taste
Heat butter in pan. Scramble eggs and add nutmeg. Pour scrambled eggs into pan; and flip when able to. Put sliced cream cheese one one side and cover with spinach. Fold the other side of omelette over spinach. Sprinkle diced tomato over omelette and serve hot.
