Sharing with friends is fun! And since we've pretty much had to stop getting together with bigger groups of friends, I thought, why not share a few of my recipes I enjoy making for our friends thus - Friends Day Wednesday!
Right now I've got a batch of Chicken Veggie Chowder cooking in the crock pot. It's simmering away and smelling fantastic! I love this chowder for a couple of reasons, it's easy to make and it is a savory spiced chowder, which everyone loves and, they always want seconds! That's a good sign!
This recipe is for a group of 8 to 10+ friends. You can always 1/2 the recipe if you don't want to make that much. FYI this chowder freezes well and it's nice to have on hand when you don't feel like cooking. Take it out in the morning and heat it up at night. One and Done! And, you can substitute frozen or canned veggies if you want to keep it really simple.
Chicken Veggie Chowder
1 pound boneless chicken breasts cut in to 1" pieces. Hint - I typically use about a 1 1/2 pounds chicken because we like it that way. Up to you!
10 to 12 ounces frozen broccoli cuts
2 cans reduced sodium chicken broth
2 cans cream of potato soup
1 1/2 cup carrots, sliced
1 can of mushrooms, drained
1/2 cup chopped onion
1 can kernel corn
2 cloves garlic, minced
1/2 teaspoon dried thyme (for a more 'savory' taste add a bit more)
Combine all ingredients in crock pot or soup kettle and heat on high for 5 hours.
Stir in 1/3 cup half and half and heat on high for 15 minutes before serving.
Extra Tip: Sometimes if I'm in a 'cheezy mood' I'll add in some shredded cheese with whatever kind I have in the refrigerator and let it melt in before serving. Yum!!
Serve with a warmed, fresh Sourdough French Loaf & butter.
