Our Favorite Salad, When Pears Are in Season...
Pictured above is one of our favorite salads. We are in the midst of pear season, and this is one way we like to incorporate them in a salad.
Ingredients
1 firm pear (Bartlett, Bosc or your favorite)
3 cups of arugula or baby spinach
1/4 cup of freshly squeezed lemon juice
Parmesan shavings to taste (we like liberal amounts)
1/3 of toasted walnuts*
3-5 tablespoons of walnut or olive oil
Instructions
Place the arugula in a large bowl
Halve and core the pear and slice thinly (sprinkle a bit of lemon juice)
Add the pears, toasted walnuts and Parmesan to the arugula
Drizzle with your favorite oil
Salt (I use sea salt) and pepper to taste
Toss and serve
*We like to toast our walnuts, because in our opinion it brings out their full flavor, and we like the crunch!
You can also use toasted pecans or hazelnuts, and use pecan or hazelnut oil.
