Rocky Dickerson is running a Savory Stories challenge for July. The goal is to share our "favorite" food related events, classes or meals. Since I love all food, I don't really have favorites, but I do have several food-related events planned for the month so thought I would share those.
The first, a 4th of July barbeque was successfully conducted on, you guessed it, the 4th of July. We were having so much fun, I forgot to take photos before we dug in. So the photos I'm sharing are after the fact. But they'll still work.
First, I made a homemade cole slaw pictured here.
It was so simple!
Basically, mix all this stuff together in a big bowl: 1 shredded head of cabbage, 1 finely chopped onion, 1 seeded and chopped bell pepper (mine was orange), chopped celery (I used 2), 1 1/2 cups sugar (I only used 1 cup - and it was Sugar in the Raw). Stir well.
Then mix 1 cup cider vinegar, 3/4 cup oil and 1 tablespoon salt in a pot and bring to boil. Stir and then pour over cabbage mixture, mix it all up, and refrigerate.
Our guests brought homemade potato salad which was also scrumptious but I neglected to get a photo of that. We also had beef kabobs with horseradish sauce (imagine my surprise when I saw July was Horseradish Month) and marinated chicken thighs.
The kabobs were also quite simple. Marinate beef cubes and peppers and onions separately in a marinade made of: 1 cup soy sauce, 1 cup oil, 2/3 cup brown sugar, 6 Tbs granulated sugar, 1/4 cup apple cider vinegar, 1/4 cup ground ginger, 1/4 cup garlic salt (note, I didn't use the ginger). That's it! Let them sit in the marinade for at least 2 hours. Cook for 8-10 minutes on a hot grill, turning once.
The horseradish sauce, which I did not photograph is made as follows: in small bowl, beat 1 cup whipping cream until it starts to thicken. Add 1 cup mayo, 1/4 cup horseradish, 1 Tbs dijon, 1 tsp lemon juice, 1/8 tsp salt. Mix it up and eat!
And finally, the chicken was SO simple. Marinate chicken thighs in some sort of barbecue sauce for as long as possible, throw in the oven and bake for 45 minutes at 400º, then throw on the grill for a few minutes until it gets brown. Eat.

So there you have it! The results of eating event #1 in July got a thumbs up from all attendees.
