Nectarine Golden Cake Recipe

Chef Dolores received this recipe from a friend and asked me to share it with you.

1 cup all-purpose flour

2 tsp baking powder

Rounded 1/4 tsp salt

1 stick unsalted butter, softened

3/4 cup plus 1/2 Tbsp sugar, divided

2 large eggs

1 tsp pure vanilla extract

1/8 tsp pure almond extract

2 nectarines, pitted and cut into 1/2 inch-thick wedges (I used peaches)

1/2 tsp grated nutmeg (I used ground nutmeg)

9-inch springform pan (I used regularly baking dish)

Preheat oven to 350 degrees with rack in the middle.  Lightly butter pan.

Whisk together flour, baking powder, and salt.

Beat butter and 3/4 cup sugar with an electric mixer until pale and fluffy.  Add eggs 1 at a time, beating well after each addition, then beat in extracts.  At low speed, mix in flour mixture until just combined.

Spread batter evenly in pan, then scatter nectarines over top.  Stir together nutmeg and remaining 1/2 Tbsp sugar and sprinkle over top.  Bake until cake is golden-brown and top is firm but tender when lightly touched (cake will rise over fruit), 45 to 50 minutes.  Cool in pan 10 minutes.  Remove side of pan and cool to warm.

Serves 8

Enjoy!

Hello Roy - reading Dolores' recipe, I wonder how many people have a springform pan?  I know peaches were used instead of nectarines and I am sure it was delicious but I am curious how nectarines might taste if used as I can't immediately recall tasting many recipes with them.

I have had orange cake before, but never nectarine Roy. The taste must be very similar. Peaches sounds like a good idea too!

Good morning, Roy... this sounds absolutely delicious whether you use nectarines or peaches... but I'll admit I do prefer nectarines.

That sounds really delicious, I am kind of glad there isn't a photo of it since that would likely lead to me craving it but not being able to have it, haha.
