Debe Maxwell, CRS asked what am I thankful for this year.Well, after thinking and shopping for Thanksgiving dinner, I thought about one of my favorite side dishes that I would like to share as I usually do every year. That is a simple one homemade Cranberry Sauce .
I was thankful I thought as I was looking for apple cider I would do a different variation that I thought would be great in case some people were also making a ham. Ok, let's start out with the basics one bag of fresh cranberry's . Take the cranberries and drain and rinse in a colander. Measure one cup of sugar, brown or white sugar can be used, it is a matter of taste. This year I am using white sugar - here is the variation this year- If you are going to go with the crushed pineapple and cranberry sauce, drain the pineapple and use 1 cup of the juice to cook the cranberry's in otherwise use one cup of water. Add one cup of sugar and dissolve the liquid and the sugar by cooking in a saucepan on the stove on a low heat.
The cranberries are ready to add when the liquid comes to a low boil. The cranberries will start to pop so either use a screen on the top or a lid I usually use a screen . Cook on low heat about 10-15 minutes I also add some vanilla about a tsp, dash orange and lemon zest even some cinnamon my friendEndre Barath, Jr. Recommend some fabulous liquors. Now we want to add a cup of crushed or chunk pineapple . Cook for another five minutes. It will look a little thin do not panic, it will thicken as it cools
Let it sit for awhile, then put in a dish or container. This dish should be made a day or two before being served to let the flavors blend. Even if you do not add the pineapple. Homemade cranberry sauce is very healthy and can be used not only as a side dish at Thanksgiving, but is great on breads as a jam and even ice cream. It also tastes much better than canned .
