Friday Fun…Cookies

 

Last weekend Larry’s Jayhawks lost miserably to Kentucky and to add salt to the wound, the Chiefs lost to the Bengals. The Streib household needed a diversion. 

 

 

What to do?  I made Oatmeal Raisin cookies. I rarely post recipes here but I have to admit, this was a good one. And besides, in my world homemade cookies qualify as comfort food!!!

Classic Oatmeal-Raisin Cookies  By Melissa Clark

YIELD 3 dozen cookies TIME 45 minutes

INGREDIENTS: *it looks like a lot of ingredients but gather them first and it's really an easy recipe

-1 cup/227 grams (2 sticks) unsalted butter, softened, more for pans
- 1 cup/200 grams dark brown sugar, packed
-1/3 cup/66 grams granulated sugar
-2 large eggs
-1 tablespoon/15 milliliters vanilla extract
- 1/2 cups/187 grams all-purpose flour
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
-4 teaspoon freshly grated nutmeg
-1/4 teaspoon ground cardamom or ground ginger
-3 cups/270 grams rolled oats (not instant)
-1 1/2 cups/225 grams raisins

Step 1 Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners

Step 2 Using an electric mixer, beat butter in a large bowl until creamy. Add Brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.

Step 3 In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins. 

Step 4 Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie. **Cookies will spread so leave at least 2 inches between the cookies

Step 5 Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.

I've always disliked Oatmeal Raisin cookies until Bernie perfected his recipe. Now, darn it, I love them.  Your recipe is similar to his, but he adds flax seed, uses half/half raisins and craisins, and adds bits of apple. They are so yummy, like a wonderful breakfast bar with coffee.

Kathy Oatmeal Raisin Cookies are one of my wife's favorite cookies, along with coconut cookies.  However, I do not care for neither one.  It is amazing we have remained married for 47 years with that huge difference between us.  🤣

Hi Kathy, Bernie here.  Debb is right - your recipe is very similar to the ingredients I use. One tip I would add is I put the raisin/craisin mix in a pyrex measuring cup and add 1/2 cup water with a tablespoon of flax seeds. I zap that for about 30 minutes and let it sit while I mix everything else and blend that in last.  That softens the flaxseed so it doesn't overwhelm!
