Easy Snack Idea

If you're like me, you're probably always looking for an easy snack idea. Especially if you're working long hours at home or in the office.

Lately, this has been my go-to snack and I'd thought you'd enjoy it too. If you have two minutes you can make this yummy snack.

Ingredients

  • Plain rice cake
  • 1-2 tbsp peanut butter
  • 3-4 dried apricots cut in half
  • 1 tbsp pumpkin seeds

Directions

  1. Spread peanut butter on the rice cake.
  2. Add apricot pieces and pumpkin seeds on top.

This is pretty filling because the pumpkin seeds and peanut butter are high in protein. Sometimes I even have them for breakfast or lunch too.

You can swap the apricots out for your favorite dried fruit, raisins are really good on this as well.

You could even add a sprinkle of chocolate chips for them too which they'd probably like.


For something that won't spike your blood sugar, having some no sugar added peanut butter or cream chees on celery is a classic snack that's pretty good.
