Allrecipes Cheesy Zucchini Casserole Recipe

 

Cheesy Zucchini Casserole

Chef Dolores used the Allrecipes Cheesy Zucchini Casserole Recipe and we really enjoyed it. She will be  using this recipe again. She used green and yellow zucchini, about 2.5 cups, one tablespoon of garlic powder rather than the garlic salt, one tablespoon of Mushroom Umami from Trader Joe's and two beaten eggs rather than one. This does sound yummy. I'm thinking that using ciabatta bread, and perhaps a combination of cheeses would be good too. I might have to try this once my zucchini start growing big enough!

Good morning Roy,

Zucchini is really very good. I never gave it a chance until the last couple of years..it's also great grilled with olive oil and spices with red pepper and purple onion or sliced and dipped in egg and rolled in cracker crumbs and cooked in oil ..sprinkled with sea salt and parmesan chees.
