All of you asked for my green chile recipe (or I think you all asked) so here you go!
2 lbs. cubed pork
1 tbs. olive oil
½ yellow onion- chopped
2 cloves garlic – minced
½ cup flour
1 tbsp. butter
½ chopped green chiles
1 can rotel original
1 can petite diced tomatoes (include juice)
Water- this varies on how thick you want it. I would say 32-48 oz.
Salt and pepper to taste
In pot cook pork, onion, salt, pepper, and oil over medium heat until done and slightly browned. Add garlic and continue to brown the meat. Add butter and flour to coat meat. Cook for a couple of minutes longer to brown flour. In separate bowl mix chiles, rotel and tomatoes. Add mixture to pot. Cook over medium for 1 minute then add water. Add water in increments of 1-2 cups at time so it doesn’t get too watery. (** if chile doesn’t get as thick as you like you can always put 2 tbsp. flour in a mason jar with ½ cup COLD water and shake mixture. Pour mixture into chile and continue to simmer**) Simmer for 30 minutes or so and add salt and pepper to taste. There you have it!
