Last night I used a couple of carrots, some radishes, an onion, a large zucchini, and a squash in a wonderful stir fry dish. I cut up the carrots, zucchini, and squash in sizeable strips. I diced the radishes and onion. All of this went into a large snapware bowl with Dale's low sodium seasoning poured over the top to marinade for at least 20-30 minutes. While it might not be the healthiest thing, I put a generous spoonful of country crock butter in a large skillet and heated it on high; yes you could use vegetable or olive oil. I added the veggies to this hot butter, turned down the heat, and marinated them for a good 20 minutes on medium. *TIP* - When your onions are translucent, the stir fry is done! As I wanted something a bit different than the usual white rice, I broke a handful of spaghetti noodles into thirds and cooked them while veggies cooked! I then served the stir fried veggies over the short spaghetti noodles. This one dish was the entire meal! It was nothing fancy, but it was easy to prepare and it was delicious!

Did you overnight me some?  I'm hungry now, thanks!  lol  Good or bad, I like butter too sometimes.  Mostly olive oil, but sometimes, you just need the butter!

Rich, there's nothing like cooking with fresh garden vegetables that you've grown yourself. The deer made a midnight snack of my tomato plants, I'm hoping they recover!

Debbie - Tomatoes are pretty hardy. Try planting marigolds around your veggies as the deer can't stand the smell of them and are a real deterrent!

Patricia - They are indeed from my garden post! If you whip an egg or two beforehand and all it to the saucepan a several minutes before the stir-fry is done it should be great! I add eggs when I am sauteing veggies for fried rice and that seems to work out pretty well! That is what I need to make for dinner! Fried Rice! Yum!

Julie - I diced them so they were more for flavor than anything else! I used both sweet and hot banana peppers as well, I forgot to include them in the post! Yep, I got points for the post!

Rich, I will add the marigolds, though I told hubby it would help a lot to CLOSE the gate to the garden, we shouldn't invite the deer in to eat!

That is my kind of a meal, ummm!!  Sounds excellent esp. since I am not much of a meat eater,  I think I would have added a glass of wine too...

I agree with Karen, mushrooms would be great. I love mushroms, and think that my salads have more mushrooms on them than lettuce.

Yep, a radish is cheaper than one tum's and it work's...My mother actually told her MD about this...he was quiet for awhile...then said to her..."She might be right..similarities"... it work's!

You can also use Diakon's which are long white radishes...they are usually real fresh when they are about 10 inches long and an inch and a half around.  You can slice them and put them on bread with a little mayo or ranch dressing and it's a great local snack...It has the same result as eating a few red radishes...

You will be amazed at how radishes act as a "natural" antacid!
