I thought I would share a Peach Cobbler Recipe. It is one of my favorite deserts and nothing brings you back to Grandma's kitchen like it. The perfect end to a good old fashioned fried chicken, mashed potatoes, corn and sweet tea dinner if you ask me. The only way to improve on Peach Cobbler is to as some homemade vanilla ice cream...or peach ice cream if you want to go crazy!

Here it is:

Grilled Peach Cobbler

8 Peaches, peeled, pitted and halved

1 (11.3 oz) can of peach nectar

1/4 cup good peach schnapps

1/2 cup butter

2 cups of biscuit mix

2 cups sugar

1 1/2 cups half & half

Vanilla Ice Cream

In a large resealable plastic bag combine peaches, peach nectar and peach schnapps. Seal bag and marinate peaches for 1 hour. Remove peaches from marinade, reserving liquid. Grill peaches over med-high heat (350 to 400) for 5 mins. per side. Slice peaches lengthwise and set aside.

Preheat oven to 350

Place butter in 13x9 pan. Place baking dish in oven to melt butter. In a medium bowl combine biscuit mix, sugar and 1/2 & 1/2. Pour batter in pan then place peaches on batter. Pour marinade over the top of the peaches. Bake 55-60 mins or until lightly browned.

Serve with Ice Cream.

Wow, that sounds so awesome my mouth is watering.

Living in SC myself, I have already had the pleasure of having some Carolina's peaches already this year and the batch I had were EXCELLENT!

I will definitely need to go get more and give this recipe a try.
