As many of you know from my posts on my garden, I am an avid gardener. I also have posted a few of the tasty dishes I have made with the bounty from my garden. Well, here is another of those yummy dishes! This very easy to make dish was made with zucchini and onions fresh from my garden! Be sure to notice that partial zucchini in the photo. That is the remaining 1/3 of one gigantic zucchini. For reference, the three zucchinis it is leaning on are whole and would, if combined, possibly provide as much as that one when it was whole. No steroids! No pesticides! No fertilizers! ALL ORGANIC!

This would make a great lunchtime dish with a fresh salad and maybe bread. It also makes a great side dish; this is what it was for me. This dish can be made to achieve two distinct consistencies. If you like a softer texture you cook it for 45 minutes, whereas those who like a more firm texture should cook it about an hour. So here goes:

  • 4 cups grated zucchini
  • 1 cup bisquick
  • 1 small onion, grated
  • 3 egg whites, 1 whole egg
  • 1/4 cup olive oil
  • 1/4 cup grated parmesan cheese
  • 1 tsp salt
  • 1 tsp parsley

Mix everything together in a bowl. Spray a 9 x 12 pie dish or a casserole with Pam and pour mixture. Bake approximately 45 minutes (an hour for firmer), until golden brown. Put a toothpick in the center to test if it is done. If it comes out clean, it is ready. Use aluminum foil if you don't like the browning of the casserole.

Debbie - You can't get much simpler than this! Just be sure you follow the tips regarding firmness and browning! The garden is producing so much that I have been sharing it with my two nieces who are in college here, my brother and his family, my sister and her family, and of course Danny and my mom! I may post on the changing face of the garden tomorrow.

Carole - My mother taught all of us to be self-sufficient at a young age. She always told us as we complained about learning to iron, cook, or whatever that she wasn't sending us out into the world not be able to care for ourselves!

That zucchini was HUGE! I only used two thirds of it for the required four cups shredded! I roasted the rest with some other veggies for a lite lunch on Friday!
