BANANA BREAD FRENCH TOAST

I've decided to post the recipe, because it was just too good not to.  This morning, I was craving french toast, but didn't have white bread, wheat bread, any of the *normal* breads.  I made banana bread last night (without nuts) and thought what do I have to loose.  It was SOOO good, I'm not going back to white bread again.

2 eggs

1 tsp vanilla

water

2 slices of Banana Bread.. any thickness you wish

Beat eggs, vanilla, and a splash of water together until well blended .  Place banana bread in mixture until well coated, and the egg has been absorbed.

Then place bread on griddle over medium heat and cook both sides.  Remove from griddle and serve warm with confectionery sugar and maple syrup. 

Once you try this, there is NO going back to the *white bread*.

Andy, Make it with *fresh* homemade banana bread.. I think that is the trick.  This recipe caught me totally off guard to be so good.

Laura... I get recipes by trial and error.  This one was done out of necessity... no white or wheat bread around.

This was one of my favorites growing up...used to let the bananas get old so mom would make banana bread.

If your the gourmet....try this out!

"Heavenly" Banana Bread Pudding

 

2 bananas, overripe
2 eggs
3/4 cup milk
2 tbsp. brown sugar
1/2 tsp. cinnamon
3 cups leftover angel food cake, cut into cubes

enough butter or cooking spray to grease the pan

  1. Preheat oven to 350°F.
  2. Grease an 8-x-8 baking dish (or several small ramekins).
  3. Line the baking dish with very thin slices of banana. I used 1/2 of a medium sized banana to cover my 8-x-8 pan.
  4. Place rest of bananas in a large bowl. With a fork mush until you have achieved a smooth consistency. Alternatively, you could puree the bananas in a food processor first. This particular batch was whipped up on New Year's Day, and I was hoping to make the least amount of noise as possible.
  5. Next, add eggs — one at a time — whisking throughly between each egg.
  6. Stir in milk.
  7. Whisk in brown sugar, allowing it to dissolve. Add in cinnamon.
  8. Add in the angel food cake. Make sure all the pieces are coated. Let the cake sit for 10 minutes in order to absorb the liquid.
  9. Pour cake mixture into pan and place into oven.
  10. Bake for 30 minutes or until an inserted knife comes out clean.

Paige... I bet you didn't know that bread pudding is my second favorite dessert... right after creme brulee.   I'll have to try this recipe soon.  Thanks for sharing.

Yummy, yummy,yummy!!  I bet Cinnamon swirl bread would make good french toast as well. I need to get creative.

Mistakes do help create masterpieces sometimes!  I remember the days (not to long ago) when there was no money for groceries and what ever was in the pantry was for dinner. Many nights included tomato sauce over something (I got pretty good at creating sauces).

Diana.. Yes, one does need to become creative, and unfortunately in these times we are down to the bare essentials.  I like the idea of Cinnamon Swirl Bread.  I'm going to give that a try next time.

Marlene.. I've tried cinnamon bread.. that is good, never tried (yet) pound cake. I just had again this weekend the banana bread for french toast.. I'm hooked on that right now.

Cheryl.. I dont' think you will be disappointed.  The banana bread gives such a different taste.. it just melts in your mouth.  I'd be interested to hear what you think after you try it.

The banana bread pudding sounds good. I love angel food cake. Never thought of making banana bread french toast. I guess I should have read this when I was at home in Idaho a few weeks ago. I even made banana bread.

Cheryl.. This recipe, I made out of desparation... had no white bread and didn't want the banana bread to go bad, was just a fluke.  Now it has become a monthly breakfast treat.  I hope you enjoy it.

To all that read the recipe for Banana Bread Pudding by Paige Rausch.. this is a must try, but double the batch.. it will be gone in no time.  I just tried it and it was great...

Kara.. I'm glad you enjoyed it.  I made a Caribbean french toast once.. with pineapple juice instead of milk, and coconut instead of cinnamon.  Was different, but not my best experiment.
