Cucumber - Onion - Tomato Salad

If you have ever had the Indian sauce raita, sometimes known as pachadi, this chilled salad is similar without some of the seasoning spices. My wife and I like to have it with BBQ or burgers instead of potato salad or cole slaw. It is both quick and easy to perpare and can easily be prepared ahead of time.

cuke salad

Ingredients:

1 cucumber

1 medium tomato

1/2 medium red onion

2 TBSP yogurt

2 TBSP mayonaise

1 TBSP vinegar

1 TBSP buttermilk (or milk)

Pepper

Garlic Powder

Salt

 

Peel, quarter and slice the cucumber. Dice the tomato. Peel and dice the red onion. Place all the sliced and diced vegetables into a bowl.

In a mixing cup or small bowl add the yogurt, mayonaise, vinegar and buttermilk. Blend. Add pepper, salt and garlic powder to taste. Stir. Pour  dressing over the sliced vegetables. Refrigerate and chill until ready to serve.

Carey - too bad that you don't like onions, you could try leeks (milder) or a sweek pepper (ok, bell peppers if you must but I don't like those).

Yum, yum...one of my favorites. Especially in the summer with fresh grown cucumbers and tomatoes. Never used the garlic powder. I'll have to try that next time.

Allen - absolutelty the best with home grown veggies (ok, I know, tomato is botanically a fruit but legally a vegetable). Try some fresh crushed garlic for a stronger flavor.

JL - as a meatitarian myself, I enjoy this dish a lot.

Mike, Here are the Reviews:)))) I made it with a few modifications. I used Persian Cucumbers and I did not have garlic powder hence I used cellery salt, I also did not have buttermilk I used heavy cream:))) Forgive the modification. Diane LOVED IT. and took it to work her Coworker LOVED it and wants the Receipe. So Thank you and total Success.
