Looking for a new side dish to serve this Thanksgiving? How about chipotle cheese corn casserole?
Here is what you need.
2 tablespoons of butter
½ yellow oro white onion chopped
1 chipotle in adobo sauce finely chopped
2 tablespoons flour
2 cups milk
2 teaspoons sugar
1 16 oz bag frozen white or yellow corn, thawed
½ cup finely shredded cheddar cheese
Preheat oven to 350 F. Melt butter in a large saucepan over medium heat. Add onion and chipotle, cook stirring for about 2 minutes. Whisk in flour and cook for about 2 minutes. Whisk in the milk; stir in the sugar. Continue whisking to a boil, and then stir in the corn.
Pour the mixture into a greased 9" square baking pan. Sprinkle cheese over and bake until bubbling and golden brown about 40-50 minutes.
