Here is another use for cilantro. I really don't measure when I cook, so the ingredients are guess-timates.
Cilantro Jalapeno Pesto
4 Cups cilantro
4 cloves garlic
1 Cup grated parmesaen cheese
2/3 Cup nuts - You can use pine nuts like regular pesto, however I sometimes use hazelnuts
Jalapenos 1 - 3 depending on how brave you are
lime juice - 1-2 Tbl
olive oil - 1/2 - 3/4 Cup (really just enough to get the right consistancy)
salt and pepper
Process garlic and nuts in food processor, add cilantro and process, add cheese and pulse some more
Add lime juice and olive oil and process until blended and the right consistancy (kind of like mayo)
This is good on pasta just like regular basil pesto.
I freeze the pesto in muffin cups for use later. One muffin cup is about a 1/2 Cup and good for 2 servings +/-
