Have you ever eaten Pork Steak?? Not Pork Chops, not steak, Pork Steak?? Please don't ask me to explain exactly what it is, because I can't. I can say I have eaten it though.
Last night I was invited out to beautiful Fripp Island to meet a crew from Fox Sports Midwest that was filming a golf segment.
They had worked hard all day long with the Fripp Island Golf Pro's filming, touring, and testing golf equipment.
They were such a jolly crew, having traveled all the way from St. Louis, they were full of energy and excited to share a bit of their home town.
Before dinner, we talked about Beaufort. Not the typical banter regarding population, politics or people..but the important things like shrimping, making grits, and well golf.
I got an extensive history lesson on Pork Steak.
It was neat to see people so passionate about sharing a piece of their hometown.
It was equally enjoyable explaining the art of shrimping. At one point, it was as if we were all from different countries!!
We aren't.
After eating the largest piece of meat ever placed on a woman's plate, it occurred to me that these generous Midwesterners may not have tried our ever so popular Shrimp-N-Grits.
Shrimp-in-WHAT ??...they said.
Well it is only fair that the favor be returned.
They went to so much trouble preparing a St. Louis style Pork Steak it would just be anti-southern not to share some grits.
What a great night.
The crew from Fox Sports Midwest taught me a lot about St. Louis, and tomorrow morning, they will be inducted into the "Yep, we have" group in regards to Beaufort's Shrimp-N-Grits.
I love Beaufort, I love sports, I now love PORK STEAK:).
