What to do with 4 lbs. of Radishes

By
Real Estate Sales Representative with First United Realty

My husband came home with about 4 lbs. of radishes. I'm still thinking of what to do with the rest of them... This is a very colorful salsa and easy to prepare.

Cyndy's Papaya-Radish Salsa

3 cups diced papaya (about 2 large)
1/4 cup chopped cilantro
1 tablespoon lime juice
Pinch of salt
1 cup diced radishes (about 1 bunch)

1. Toss papayas, cilantro, lime juice and salt in a bowl.

2. Stir in radishes just before serving.

3. Serve with pita points, or your favorite tortilla chips. We even had it sprinkled on top of our tossed salads last night.

Not that this is your topic, however, I always have radishes...eating a few of them when you have indigestion is better than a Rolaid, or a Coke...

Radishes are better for indigestion than most over the counter medicines for indigestion...JMHO!

We went to a great German restaurant and they served radishes as one of the items to dip in their fondue and it was great.
