Breakfast Sliders

 

An alternative to a traditional breakfast.

 

6 large eggs

 

Salt and pepper to taste

 

2 oz thinly sliced ham

 

2 oz thinly sliced turkey

 

2 slices American cheese singles

 

2 slices pepper jack cheese

 

4 soft rolls, approximately 2 inches by 2 ½ inches

 

Beat the eggs season with salt and pepper.

 

Place a 10 inch nonstick skillet over medium high heat for 20 to 30 seconds.  When hot, add the egg mixture and reduce the heat to medium.  Do not stir.  When the edges are set, use a spatula to push the edges inward, allowing the uncooked egg portion to flow onto the skillet.  Do this several times, then cover and cook until the eggs are soft set about 6 minutes.

 

While the eggs are cooking, cut the rolls in half.  Place about ½ oz ham on the bottom half of each roll.  Then slices can be folded to fit.  Repeat with the turkey.

 

Remove the eggs from the pan and place on a cutting board.  Trim the edges to make a square.  Cut the eggs into 8 pieces about the size of the roll, allowing 2 per roll.  Place 2 egg slices on the top of the meat.  Cut the cheese to fit and place several pieces on top of the eggs.  Add the top to each roll and press down.

 

To heat in a microwave, microwave each slider on high 15 to 20 seconds.

 

To heat in the oven, preheat the oven to 375.  Place foil wrapped sliders in over for 12 to 15 minutes to warm.

Hi Richard... It has not escaped my attention that 4 of your last 5 posts have been recipes (and except for an offer of lettuce and baby carrots, not that are terribly healthy).  Perhaps you should go into partnership with Wolfgang Puck on a new restautrant here in Dallas!

I have never heard of sliders until a friend of mine in the Restaurant industry told me what they were.

Thanks for your comments.  Traditionally sliders are roast beef, hambergers or BBQ.  In my mind those would also be good for breakfast.

Steve,

I don't understand the obsession with healty eating.  As a short sale specialist you are going to die from a stroke, so why not just be heavy and enjoy.

I would love being sous chef for Mr. Puck.
