So many of you liked my dinner for 4 for under $12 recipe I'll give you another one that you can use.  Again for those on a budget, this is dinner for 4 for under $12.

This one is home made sweet and sour pork over rice.   It's colorful and delicious....and you can do it all in one high sided frying pan, except for the rice.

Here's what you'll need.

- 1 1/2 lb. of cubed shoulder pork.  (re-cut into bite sized pieces.)

- 1 can of (no-name) pineapple tidbits.

- 1/2 cup light brown sugar

- 1/4 cup white vinegar

- 1/2 medium size red bell pepper

- 1/2 medium size green bell pepper

- 1/2 cup tomato ketchup (no name)

- 1/2 stalk of celery (chopped)

- 1 chopped cooking onion

- No Name Minute Rice

Directions

- Pan fry pork until cooked completely through, but not over cooked. (Keep it tender.)

- Cut peppers lengthwise into narrow strips.   (1/2 red and 1/2 green bell pepper...add more if you wish.)

- Turn down heat slightly and add water to your pan and toss in peppers, celelry and onion to blanch.

- When vegetables have lost their crunch...drain off water and with the heat lowered again slightly add can of pineapple and juice, white vinegar, brown sugar, stir in tomato ketchup.

- Cover and allow to simmer for a minute and taste sauce to make sure it's right for you.  Add extra ingredients as necessary to balance flavor.

- Simmer with cover on pan for two minutes and then add appropriate amount of corn starch (mixed with water) to thicken.

- Simmer again for another two minutes.

- Put minute rice on plate and ladle sweet & sour pork mixture on top of rice.

There you have it....  Dinner for 4 for under $12.   Preparation time is under and hour from start to finish...with minimum clean up.

David - my family loves to cook and very rarely do we go out now.  Mainly because we know we can cook far better and for less.  We'll sometimes put together a mix of groceries in a bag and make a meal from it with no recipes etc.   I love what you shared above and I'll be sure to try it out soon.
