Is the plastic thingy a cooking bag? It Does speed up the cooking time. I started used them a few years ago, now a must.
The plastic thingy is the thing that is holding the legs together.
Hi Ellie - I specialize in "eating" on Thanksgiving and have no clue as to how to cook that bird. I'm sure you'll get it done right and everyone will be happy. Happy Thanksgiving and best wishes to you and yours.

Ellie, driving to my mom's house in Owings Mills, I was listening to the special edition of Splendid Table on NPR. Nora Ephron was one of the guests, and they talked about cooking at very high heat for a shorter time. By the time I reached my mother's house, I was totally starving!
Hey - how did the turkey turn out? Hope is was great!
I say pardon the turkey and order Chinese!!!

Roasting the turkey with water or broth in the bottom of the pan and a foil tent on top will steam it nicely and keep the meat moist. I remove the foil tent for the last 30 minutes to brown it on top. I am sure Dennis turned out great!
