Ham and corn soup

If you have any left over ham here is a great quick soup recipe.

 2 tbsp butter

1 chopped onion

2 diced carrots

1 diced celery stalk

2 cans cream corn

1 can regular corn drained

1 can chicken broth

1 cup diced ham

6 cups milk

¼ teaspoon red pepper

Salt and pepper to taste

2 cups cheddar cheese 

Sautee onion, carrots and celery in butter for about 5 minutes.  Add ham and can of chicken broth.  Bring to boil then reduce heat and simmer 15 minutes.  

Add corn, milk, cheese and seasonings.  Bring to low boil, reduce heat and simmer 20 - 25 minutes.

Hi Richard... Does it work with leftover Turkey?  With the weather getting cold I need some dining options while I wait for Wolfgang Puck's new restaurant to open here in Dallas!

Steve,

I guess that would depend on you definition of work.  If you have some leftover turkey I say give it a try.  I too can hardly wait for Mr. Puck's grand opening.
