Cooper's Old Time Pit Bar-B-Que, Llano, Texas and now in New Braunfels, Texas (Loop 337)
Cooper's engages in two practices that some consider antithetical to the state's trademark style: direct-heat cooking that's dangerously close to grilling, and saucing. But this cowboy-style barbecue spot breaks the rules proudly, cooking meat about two feet from mesquite coals and then finishing it over low heat until you step up to the outdoor pits and point to what you want: extra-thick pork chops, sirloin, or beef ribs. The mesquite flavor is what makes the BBQ, it is excellent.
Cooper's in one of the best places to eat good out Texas BBQ in Texas. If you ever get over to New Braunfels (my stomping grounds) be sure to stop by and visit Cooper's.

Is there really any other way to BBQ, than over mesquite. I don't think so. Back home, I would go out in to the woods. To get my mesquite wood to BBQ with. I would split a log in four's. Then take one peace and soak it for 6 hours. Then put it on top of the coals. mmmm good!! It sure don't any better than that.
