Ingredients:

  8-10 medium white potatoes

  1 stick salted sweet butter

  2/3 cup sour cream

  1/2 cup mayonnaise

  1/3 cup whole milk (if needed for a creamy mashed potato)

  Salt and pepper, to taste

  2 Tbsp chives, minced

 

      Directions

  Peel, dice, and boil potatoes until tender, then drain. Add butter to potatoes immediately while still hot. Mash potatoes by hand or mixer to near desired consistency. Add sour cream and mayonnaise and mix. Add salt, pepper, and chives to taste and mix. Add milk if necessary.  Number of servings: 10-12

Those sound too good.  May have to make them tonight.  We're in the middle of a storm & I'm stuck in the house... these sound comforting.  : )  I'll half it though, don't want to be tempted to eat t he whole thing!
