Please excuse the off-topic photo. I have boiled crawfish on the mind. We had a delightful batch last night. Somewhere between pounds 3-4 I thought about how reliable crawfish season is.
Early on the crustations are small and HYPER expensive (think 6 bucks a pound). As the season progresses they get large and the price usually drops to under 3 dollars a pound. March and April are great months in Louisiana for this reason alone.

As of Thursday there is one fewer home for sale in Pineville, La. After an extended escrow due to delays from Rural Development, we were able to meet at the closing table and transfer keys.
