Monday Morning Motivator Muffins!! I made these for this weeks meeting and there weren't any left to bring home. They were really delicious. They rose up nicely and were nice and light with good flavor. If you come to our Monday Morning Motivator Meeting at 5 Crain Hwy N in Glen Burnie you'll get more than just muffins!!
Ingredients:
12 1/2 ounces cake flour
1 tsp baking soda
2 tsp baking powder
Heavy pinch of salt (about 1/4 tsp)
1 c. sugar
1/2 c vegetable oil
1 egg
1 c. yogurt
1 1/2 c. fresh or frozen blueberries
