Cranberry Salad for Thanksgiving - Also makes a great dessert!
Do you love or hate cranberries? Most people seem not to like them but this recipe will make you say, Wow, I love them. I make it anytime of year. I got this off the food network many years ago; made a few changes, and my family and friends love it. I've even used it as a dessert. I tend to leave off the sauce because the salad is so good even without it. I have friends who leave out the ginger because they don't like the taste of it. And, I set the timer for 50 minutes when I put it in the fridge so I don't forget to pull it out when it's soft-set. 1 (6-ounce) package raspberry gelatin (can substitute cranberry, orange or cherry-flavored gelatin. They are all good) 1 (16-ounce) can whole cranberry sauce (not the plain jelly-type) 1 teaspoon ginger 1/2 cup red grapes 1/2 cup walnuts or pecans (chopped) 1/2 cup chopped celery 1 large apple, diced 1 can Mandarin oranges, drained, juice reserved SAUCE: 1/2 cup sour cream 1/2 cup mayonnaise 1 teaspoon orange zest 2 tablespoons orange juice Prepare gelatin with 2 cups boiling water.
