A Very Unique Way of Making a Custard Pie
I'm not a flavored coffee creamer kind of girl.  I only buy the stuff when I'm having guests who use it.  So, after looking at the Bailey's flavored coffee creamer in my 'frig for the past couple of weeks, I got a brilliant idea!  Why not use it in place of some of the half-n-half or milk in my husband's favorite custard pie recipe?
Here's the Recipe:
4 eggs 1/4 cup sugar 1 cup Bailey's Coffee Creamer (I used Creme Brule') 1 cup 2% milk 1 tblsp vanilla 1/8 tsp. salt 1 tsp cinnamon For pie crust, either make your favorite or purchase a frozen one.  Marie Calendar's are great! I baked my homemade crust at 450 degrees for 8 minutes and then turned the heat down to 350 degrees to continue baking after the custard mixture was added.
For the custard, beat eggs with wire whisk.  Add sugar and whisk until mixed.  Add the Bailey's coffee creamer and milk, slowly as you continue mixing with your wire whisk.  Add the remaining ingredients and whisk until incorporated.
Pour liquid into partially baked pie crust and bake for approximately 45 - 50 minutes at 350 degrees.  The edges will puff up but ... more
