DO YOU HAVE A THANKSGIVING TRADITION?
I make the same muffin recipe everything year. I tell myself I’ll bake these throughout the year but I never do…just on Thanksgiving Day.
My oldest son brought home the recipe from school when he was in kindergarten in 1995 and I have been making the muffins ever since. DO YOU HAVE A THANKSGIVING TRADITION?
Cranberry Muffins
Mix in a bowl:
2 cups flour
1 cup sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
2 teaspoons grated orange peel
1 ½ teaspoon nutmeg
1 teaspoon cinnamon
½ teaspoon ginger
Cut in:
½ cup butter with knives or a pastry blender
Stir in:
¾ cup orange juice
1 Tablespoon vanilla
2 eggs
Fold in:
1 ½ cups chopped cranberries
1 ½ cups walnuts
Fill muffin tins 2/3 full and bake at 350 degrees for 25 minutes. Makes 18 regular size. 
         
I usually make 12 regular and 24 minis (1/2 baking time).
