Today's a great time for Soup!
Okay Folks this month’s recipe is one of my favorites: Potato Soup!
4 cups potatoes (sliced or diced), 1 stalk of celery (diced), 1 tbsp. onion (minced), 1-1/2 tsp. salt,
2 cups hot water, 2 tbsp. butter or margarine, 1 tbsp. flour, 1 can cream of celery soup,
2 cans milk (or more for thinner soup), 2 tbsp. fresh parsley (chopped), 1 hard boiled egg (chopped)
Brown onion in butter.
Add flour, blend well. Add potatoes, carrots, salt and water.
Cover and cook until vegetables are tender.
Blend cream of celery soup with the milk and heat. Add to cooked ingredients.
(You may wish to use 3 or 4 strokes with a potato masher before adding soup. This makes the soup creamier.)
Garnish with fresh parsley and hard boiled egg.
If you wish to thicken add instant mashed potato flakes.
Serves 6 to 8
