Baked Stuffed Delicata Squash for your main course!
Delicata Squash (aka Cucurbita Pepo Delicata), buy it, stuff it, bake it and then eat itJ. According to many nutritious conscious people there is one common agreement that winter squash is among the most nutritious vegetables, even rivaling carrots, spinach and cabbage.

If you never had Delicata Squash and love vegetables, then you need to incorporate it into your winter menu. The only drawback is, they do not store or ship well. So if your Farmer’s Market or your Trader Joe’s have it then take advantage of the moment and buy it.

Preparing winter squash for cooking is relatively identical, does not matter which type you have. Cut it in half, clean out the seeds and stringier insides if you want to make vegetable stock you can use the stringier fibers (I just throw them away). The seeds can be toasted as if they were pumpkin seeds.
