Queso vs. Queso Fundido: Los Pinos, Hudson Bend
So many people come to Austin and become instant queso ambassadors.  They talk non-stop about queso, post about queso, debate the best quesos and put it on absolutely everything.
 
And don't get me wrong, I like queso, but I truly LOVE Queso Fundido...especially the kind made at Los Pinos in Hudson Bend; Austin, TX.
 
This is not the nearly liquefied kind -of- cheese/ kind-of -not-cheese that is the signature of most queso.  This is real, stringy, melty, steamy hot cheese that becomes just the base for the rest of the dish. Encased in the cheese are grilled and roasted peppers and onions.  Those veggies are close companions with the ground chorizo and pico de gallo that give the Fundido real flavor.  And this queso is jam-packed with these veggies and meat...plus I love when I find a few mushrooms thrown in.  
 
To eat it, you need to wrestle with the dish, mixing it all up and cradling it within a fresh corn or flour tortilla. This is not a chip-type queso...this dish is to substantial for a chip.  You wrap your fundido and eat it taco style...trying not to get stringy cheese everywhere...you don't want to waste it for heaven's sake.
