If you're looking for a little "hole in the wall" type Mexican restaurant where you can enjoy some authentic food, head over to Kihei to this small eatery off Lipoa Street.
I heard about them on YELP, which is how I usually learn about new places to eat on Maui.  I got there before 12 noon, so I had the place to myself, which is not surprising since there's only a few tables.  They probably do a lot of take out business, and I did see people coming and going with their lunch orders.
The woman behind the counter was very nice and friendly and answered my questions about what to order.  I settled on the Tamale Preparado and the Taco El Pastor which came out really quickly.  There's an assortment of salsas from mild to extra spicy, and some pickled onion slices and cilantro to garnish your food.  The food was very good and filling, and I had no trouble putting it all away.  Prices were very reasonable too!
