Tonight's Dinner was inspired by one of my cookbooks. The one I referenced the other day The Flavors of Asia, by Mai Pham. Endorsed by the Culinary Institute of America aka the CIA. Needless to say, I looked at about ten recipes and decided to do my own version. First and foremost, I made Sushi Rice. Plan on 30 minutes to make it. While I was making the rice, I decide to do some creative ideas, well smoked mussels from the can, then I realized how powerful the smell and the flavors were, I immediately opened another can of Patagonian mussels, much milder.

Some nights you know you will have to get up early and still need to make dinner... what is one to do? Well in my case I just pull out my leftover soup from the other day. Then make a salad, not just an ordinary salad, but I use one of my leftover baked salmons. Vola and you have a light easy clean up dinner. Speechless Sundays: browsing through a few of my cookbooks I was inspired to make some more great food. Needless to say, on my way home from a photo shoot on one of my newest listings, I had to stop in at Trader Joe's to get some of the missing ingredients for my future cooking. So with that said stay tuned what I will create from browsing through these cookbooks. Not sure if Diane is aware but there will be some great meals coming her way soon. There are so many to choose from it is almost too hard for me to narrow the list

Well in all fairness I had this tool for over three or four years and have been meaning to make a meal with it. As we all know time, focus and distractions kept it in my cupboard for so long. Well today was the day I decided to play with it and how fun it was. Converting three zucchinis into something that looks like pasta:))) The meal was great, tasted light, now I will need to play with it more and improve on it. Not bad for a first attempt. This recipe was inspired by one of my cookbooks "The Rheumatoid Arthritis Cookbook" by Caitlin Samson a clinical Nutritionist. Do not be put off with the Title, there are some great recipes and clearly many were interested when I posted the results. Now let me get to the ingredients, keep in mind to me a recipe is just a guide or inspiration. Hence, I have made many changes, now with that said: 1. Well, I tend to relax by making a meal and hopefully it is a fun and tasty meal. Now with that said, I decided to try purple sweet potato instead of the yellow one. Speechless Sundays: sometimes a first attempt does not turn out as we would like it. As some of you know I have been tasked with creating Mexican style meals. I have never cooked before, so I started cautiously. Well, here was my first attempt. I decided to make Creamy Chicken Enchiladas. Keep in mind I am seasoned enough to know not to go with the timelines: Prep Time: 15 minutes not really plan on 30-40 minutes Cooking time: 45 minutes, well if you turn the heat up 30 minutes my take:) Total Time: 1 hour Not really plan on 1:30 minutes Ingredients: 1, two tablespoon of butter (Unsalted)

Speechless Sundays: time to lighten things up, I have been commenting about AI on many posts and everyone knows my thoughts and position especially since my last post. Now with that said, I thought I would lighten things up and have you decided which salad you prefer? Friday Fun Day: after a hectic week how about playing with food?... Well, I had some idea what to make for dinner but turned-out Diane did not have lunch. She had a hectic day too... hence I improvised on what I was planning on making for dinner. In fairness to disclosure the rice was made yesterday, and it was intentionally made dry and burnt a bit so I could use the leftovers either in soup or some other manner to make it soft again. I snuck in there a can of black beans to make it more of a Spanish twist. So, check out

Wordless Wednesdays: I had a busy day, hence wanted an easy cleanup dinner, one pot dish. In addition, Diane was going early to the Dentist and then to work reconfirming the easy cleanup dinner concept. So, with that said my one pot dish was adjusted. I wanted to have spinach tortellini with the easy one pot dish, Diane said, well could you make rigatoni instead? Wordless Wednesdays: just for fun Mac & Cheese flavored popcorn... I do a lot of high-end meals but there are times when I just like playing with food. Now with that said how about making a Kraft's Mac & Cheese flavored Popcorn? Ingredients: 1. 1/2 a cup of corn 2. one tablespoon of canola oil 3. two ounces of butter 4. bag of Mac & Cheese mixture (use the pasta for something else) 5. another four ounces of melted butter. Bake a half a cup of corn with the butter and oil. Then pour it into a container such as a plastic one

Another Wordless Wednesday Post: How to recycle leftover pasta... well take some fresh Shitake mushrooms, add some langostino tails, some mixed seafood both frozen and some onions, fresh baby spinach with some chicken stock or broth. Little olive oil and some butter well that is just for extra flavors and then ones the mushrooms have been sauteed and the mixed seafood is cooked as well, then add a little more chicken stock for extra liquid and flavors. If you have sundried tomatoes with oil add a couple teaspoons of it into the mix. Once all mixed and ready then add the leftover

Fun easy dinner at home: Pasta with seafood and vegies... I have had a few hectic days and wanted to do something easy. The good news is that I had leftover tomato sauce I made a while back. Needless to say, I always have frozen mixed seafood in the freezer. Had to add a handful of mixed frozen vegies as well. Hence all I needed was to boil some pasta (also from Trader Joe's) hence while Diane was feeding the animal farm dinner came together in less than 40 minutes. Let's have a quick easy light dinner, request by Diane... her wish is my command:) So, with that said how about some fresh Shitake mushrooms, some Trumpet Mushrooms and some brown beech mushrooms sauteed with onions, garlic olive oil and some seasoned butter. Well let's add some garbanzo beans and some fresh baby spinach with a little carrots and green peas. Well, OK we need some stock mixture too, bone broth, chicken and vegetable stock. Speechless Sunday: Cauliflower soup ala Mustard's Grill Restaurant in St. Helena, Napa... this dinner was inspired by one of our friends. They reached out to me and asked which Wineries to visit in Napa and they were five hours away:) Now with that said I gave them five or more off the top of my head. They in turn replied once they settled in that they went to Mustards Grill for Dinner. I loved that Mustards Grill, was still around and therefore I needed to take out the cookbook and tonight's dinner was a Cauliflower Soup. Did not follow it to the letter

Wordless Wednesdays: what did you have for dinner tonight?... I was busy today so while I was on the road, Diane decided to clean the fridge (against my approval) ... So, I get home and want to make dinner, told her what I had in mind... she said I saw some Sausages in the fridge can you make that instead? I said sure... I her mind I know she was visualizing onions sausage and bread with mustard and other condiments. Well instead while she was feeding the cats I made this.
