I have said before how much I like Ellie Krieger's recipes. Ellie is the nutrionist on PBS who has wonderful recipe's that are healthy and easy! This is recipe is one of my favorites! It is my go to recipe for shrimp! I have tweaked it a bit, but I love it!
 

  Ingredients
1 ¼ pounds large shrimp, peeled and deveined (I use U12-15 shrimp)
10 large cloves garlic sliced
1 package of fresh baby spinach leaves

Everyone in Florida can attest to how hot it's been this summer. This summer salad is from Madamenoire and is a great way to cool down on those hot summer days.
Ingredients
– 2 cups of seedless watermelons – cubed
– 2 cups of thinly sliced or cubed cucumbers
– 2 tablespoons of lime juice
– ½ teaspoon of salt
– 1 pinch of mint (or slice finely)
– 2 tablespoons of feta cheese (optional)

I saw this recipe online for garlic soup. Now I LOVE garlic and this is right up my alley! The author was making some pretty hefty claims on this soup being able to cure all that ails us. I recently posted a blog regarding all the fruit trees that I recently planted. Well I am very happy to report that my mango trees are rocking it! My Kiett mango tree currently has over 100 baby mangos growing on it! Realistically, if we have any big storms, I could lose some of them, so I am hoping for smooth sailing going forward! Coconut Peanut Curried Chicken 
30 minutes active; 3+ hours inactive to prepare, Serves 6-8

If you live on the Space Coast and you love avocados as much as I do, I have a great tip for you! The Winn Dixie store on Eau Gallie and A1a is having a sale on Hass Avocados.
Yesterday when I walked in, they were selling for $1.25 a piece. Today I stopped in to pick something up, and there was an entire table full of Hass Avocados on sale for 50 cents a piece!
This is a great opportunity to stock up and maybe try grinding up some of those pits to put in your morning smoothie!

As the weather gets warmer here on the beautiful Space Coast of Florida, my desire for heavy food dwindles. So, this vegetable lasagna recipe really appeals to me this time of year. I love cauliflower and broccoli and anything with mushrooms is okay by me. What do you think?

OK, I can just come out and say it. I love the Melbourne Beach Supermarket. I am a cook, and I make a lot of different types of food. I am known in my office for my homemade hummus. In fact I make all different types of Middle Eastern food having grown up there when my dad was in the oil biz.
