Kay Fisher & Lauren had the pleasure of attending Kindred Restaurant’s soft-opening this week, before its grand opening last night – February 19th.  Kindred Restaurant is owned by Davidson residents, Joe & Katy Kindred.  Joe is the former chef for Rooster’s Uptown and is now showcasing his creativity exclusively in Davidson.

At East Lincoln Betterment Association’s (ELBA) last meeting in early January, Lincoln County’s Director of Planning & Inspections spoke about upcoming projects for Denver, the eastern part of the county.  ELBA meets monthly in Denver at St. Peter by the Lake Episcopal Church.  These meetings are open to the public.
The Planning & Inspections Director focused on growth in the eastern part of Lincoln County, and future planning for Denver.  Denver is predicted to grow tremendously over the next 5-10 years.  The Director provided brief explanations of different areas of growth:

  Developers are in the planning stages of building eastern Lincoln County’s first hotel.  Cottonwood Hotel is proposed to be a six story, 140 room hotel near the Highway 73 & Highway 16 interchange.
The hotel would sit east of Highway 16 Business and be near other local retailers –Lowe’s, Showmars, Midtown Sundries, WalMart, Zaxby’s, Sweet Dreams, and more.   This would be the area’s first building that could host conference meetings, weddings, and other events.  The developer is currently in discussion with Marriott and Hilton to have a hotel brand.

I had the opportunity to take a sneak-peek tour at the Whole Foods Market, located in the Northcross Commons shopping center in Huntersville. This opening has been quite the buzz lately – since Lake Norman residents won’t have to drive to South Charlotte anymore.
During the tour, I had a feast – sampling pineapple mango salsa, pulled pork, and even cupcakes! We all received a reusable bag filled with goodies at the end of the tour as well.
