greens: Chopped Salad! - 04/18/11 02:54 AM
It is almost earth day.  I think we should dedicate more than one day to the earth but hey what do I know.
I am green year around.  Here is a great salad recipe that will get you your greens, yellows, oranges, purples and reds.  This gorgeous salad is jam packed with nutrients.   You can use the dressing on other salads too.

Chopped Salad with Shallot Poppy Seed Dressing
8 stalks of asparagus
1 avocado
1 T lemon juice
2 heads of endive, chopped
1 head radicchio, chopped
2 bunches of watercress, chopped
1 cup of cherry tomatoes, halved

Lemon-Rosemary Grilled Swordfish with Greens!
2 tablespoons lemon juice1/4 cup olive oil1 1/2 teaspoons rosemary1/4 teaspoon salt1/4 teaspoon black pepper2 tablespoons garlic, minced2 pounds swordfish, 4 to 6 cups chopped1 head escarole, 6 cups chopped1 pound broccoli rabe1 tablespoon olive oil1/8 teaspoon red pepper flakes, pitted and sliced15 black oliveslemon wedges to garnish
1.    In a small bowl or blender, whisk together lemon juice, olive oil, and minced rosemary.  Season with salt and pepper.  Separate the dressing into two equal portions.  Use this portion to marinate the swordfish.  Let sit for 15  to 20 minutes.  … (6 comments)

Need I say more?  I help people find the food they love that make them feel. look and function at their best.
Eat Kale!  Many of the southern cooks know about the leafy greens - mustard greens and collards, beet and dandilion greens, kale and escarole.  They are the veggies that is least seen at the dinner table yet they are the best for you.  I run into people all the time that want to learn more but have not idea what to do with them.

   Okay, I’ll admit it, I am over the top at times.  I love to shop for food.  I love the produce section.  I dream about farmer’s markets.  I need psychotherapy for sure.  I make my husband examine bunches of kale and broccoli rabe up close because they are just so gorgeous.  Of all the produce, greens are my favorite by far.  Yeah a tomato or an organic carrot with their wispy leaves maybe even a slim stalk of asparagus may catch my eye but the greens are glorious.
