mountain cabins: Patty's Baked Squash

I'm not a big squash person, but this is a great recipe that makes squash taste pretty good. 3 lbs. yellow summer squash 1/2 cup chopped onion 1/2 cup crushed Ritz crackers, plus a cup for the topping 2 eggs 1 stick butter or margarine 1 Tbsp. sugar 1 tsp. salt 1/2 tsp. black pepper Wash and cut up squash. Boil until tender. Drain, then mash. Add all ingredients except 1/2 of butter and crackers for the topping, to the squash. Pour mixture in baking dish, then spread remaining Ritz crackers and melted butter on top of crackers. Bake at 350 for 1 hour. Enjoy
