The weather is cooling down.  Time to break out the comfort food!
Saucy Stuffed Peppers Ingredients 1 lb. Ground Beef 2 tbl. long grain Rice 2 tbl. Yellow Onion, minced 1 tbl. each Celery Salt, Onion and Garlic Powder 1 tea. Black Pepper 4 large Green Bell Peppers, cut top off, halved and seeded 1 tbl. Canola Oil 1/2 qt. Vegetable Juice 2 c. of Water,  as needed 1 tbl. Beef Bouillon or Base Salt and Pepper to taste 4 Servings of Mashed Potatoes, homemade or box Instructions Knead first 5 ingredients until well blended together. Broccoli Polonaise Ingredients 3/4 cup butter or margarine 9 slices white or whole wheat bread, crumbled 3 hard-cooked eggs, peeled and chopped 1 1/2 cup chopped fresh parsley 3/4 tsp. salt 6 pounds fresh broccoli, trimmed Instructions In a skillet, melt butter. Add bread crumbs and saute until golden. Stir in eggs, parsley and salt. Meanwhile, cook broccoli in a small amount of water until crisp-tender. Drain and transfer to platter. Spoon topping over the broccoli. Quick Tip This recipe can be scaled down for feeding a smaller group.
Variations Can substitute asparagus for broccoli.

Now that the weather is warming up - hot in some area, you'll be looking for a quick and refreshing salad.  I think this one can also be described as unusual, too.  But, believe me, it's good!
 
1 apple, cored and diced 1 small cucumber, peeled and chopped with seeds removed 1/2 small red onion, diced 1 tablespoon apple cider vinegar sea salt In a bowl, toss all ingredients together and serve.

Breadsticks for Two sounds perfect! Since our kids all grown up and have families of their own, it's sometimes difficult to find recipes that are suitable for two people. It's okay to freeze the extra but somehow it doesn't always taste as good. So, here's the perfect recipe that serves two and can always be eaten in one sitting.
Breadsticks for Two
1/3 cup grated Parmesan cheese
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1 egg white
1 teaspoon water

Normally, I love the holidays.  However, I have a new daughter-in-law who begins planning the holiday meals months in advance.  She buys Martha Stewart magazines and religiously watches the Food Network Channel; oohing and aahing and making little notes in every margin on every page.  She prepares her grocery list well in advance to make sure she has every little item for her Thanksgiving feast.
