I'm not a flavored coffee creamer kind of girl.  I only buy the stuff when I'm having guests who use it.  So, after looking at the Bailey's flavored coffee creamer in my 'frig for the past couple of weeks, I got a brilliant idea!  Why not use it in place of some of the half-n-half or milk in my husband's favorite custard pie recipe?
Here's the Recipe:
4 eggs 1/4 cup sugar 1 cup Bailey's Coffee Creamer (I used Creme Brule') 1 cup 2% milk 1 tblsp vanilla 1/8 tsp. salt 1 tsp cinnamon For pie crust, either make your favorite … (8 comments)

I had never made a pineapple pie before but thought it might be kinda interesting to try.
8 ounces softened cream cheese 1 14-ounce can condensed milk 1/3 cup lemon juice 1 8-ounce carton whipped topping 1 15-ounce can crushed pineapple, drained 1/2 cup chopped pecans 2 graham cracker pie crusts Combine the cream cheese, condensed milk, and lemon juice. Beat with a mixer until smooth. Stir in the pineapple and nuts. Fold in the whipped topping. Divide the mixture evenly between the two pie crusts.
Chill in the refrigerator at least four hours before serving.

I often see this salad in the deli case at our local grocery store.  Unfortunately, since it sits there too long (apparently), the veggies aren't as crisp as I like.  Making this salad fresh is just the ticket!
 Great to serve with grilled teriyaki chicken thighs …

Now that the weather is warming up - hot in some area, you'll be looking for a quick and refreshing salad.  I think this one can also be described as unusual, too.  But, believe me, it's good!
 
1 apple, cored and diced 1 small cucumber, peeled and chopped with seeds removed 1/2 small red onion, diced 1 tablespoon apple cider vinegar sea salt In a bowl, toss all ingredients together and serve.

On May 5th of every year, we celebrate this Mexican holiday – Cinco de Mayo. It’s the Mexican army’s victory over the French, known as the Battle of Puebla, occurring in 1862. This not to be confused with Mexican Independence Day which happened on September 15, 1810 at midnight.
