When my family moved from Ohio to California in the ‘60s, we were introduced to a new type of food – Mexican.  At my house, though, it was made from the little spice packets that you add to the ground beef and tomato paste.  It sounds absolutely horrible now, but we loved it!
Fortunately, my taste buds grew up and I was introduced to the real thing.  (And I’m not talking about the kind you get going through the drive-thru.)  There’s nothing more satisfying than cooking a great Mexican meal at home.

On May 5th of every year, we celebrate this Mexican holiday – Cinco de Mayo. It’s the Mexican army’s victory over the French, known as the Battle of Puebla, occurring in 1862. This not to be confused with Mexican Independence Day which happened on September 15, 1810 at midnight.
Today, people of every ethnicity are happy to celebrate Cinco de Mayo along with their Mexican friends. Who doesn’t love a party?!

Well, Dana has been at it again.  For those of you who don't know, Dana is my baby sister.  With her culinary background and natural ability to create the most delicious meals, she's created an amazing new recipe.
The main ingredients are chicken, chipotle and chorizo - this Cha Cha Chicken.  I made it for dinner last night and my husband ate the whole thing - less my portion, of course.

mexican cooking: Spanish Rice - It Doesn't Get Any Easier Than This! - 02/01/10 07:06 AM
I used to be able to find great Spanish Rice in package made by Knorr. I don't know if they quit making it or my grocery store just stopped carrying it.
I came up with this Spanish Rice recipe out of desperation. It's so simple and only takes a few minutes and even fewer ingredients. I am not real big on measurements when I make this, so use your own judgement and taste.
