 Here are two of my favorite fall recipes.
 The apple crisp is vegan and gluten free, but you would never know that it's healthy....it's really very good! 
 The squash tart is not vegan or gluten free but easily adjusted to be either.

This apple crisp recipe is the perfect dessert for two.
It's quick to throw together, and really delicious with your favorite vanilla ice cream. 
The only problem is you may find yourself wanting more! You may want to use a larger skillet and double or triple the recipe!

Although I'm not 100% Vegan, I do eat mostly a plant based diet so all of these recipes are meat and dairy free. Don't let that scare you....they are all really good!
 
 Potato, Spinach & Mushroom Soup
 
This soup is so easy to make and it's very creamy, even though there is no dairy added!
Saute 2 1/2 cups chopped mushrooms and 1 chopped onion until tender. Add Italian seasoning, salt and pepper to taste.  Add 4 handfuls of baby spinach and saute on low until wilted. Remove from pan and set aside.

It's been three months since my last confession.....
I mean, my last Vegan recipe post!
I've mostly been making my favorite go-to recipes lately, but I have managed to find some new ones to share. 
The first recipe was created by my daughter, Ashley.  She pretty much tossed a bunch of ingredients together and the results were wonderful.  Ashley told me the ingredients and estimated amounts she used so I could make it for our Super Bowl celebration.  I tried to keep track of measurements, when I made it, so I could share the recipe.  Add or subtract from my measurements as you wish.

It is so hard for me to believe that in less than two weeks it will be two years since I started my vegan adventure! It's been much more than a diet....it's been a lifestyle change. I no longer refer to myself as "vegan" because I'm not 100%, but that is the term that best describes how I eat MOST of the time.

I haven't posted a vegan recipe in quite awhile.  I'm still maintaining a mostly plant based diet, but I haven't had any new recipes to share, because the last three new recipes I tried were fails. One of them actually went straight to the trash.  I'm 0 for 3.  I HATE it when that happens.  All that work, not to mention cost, and the recipe is a huge disappointment.

Time to share more of my favorite vegan recipes!  I haven't really been looking for new recipes the last few months....just been enjoying my favorites, so I only have three to share with you today.
It's been almost a year and a half now since choosing a plant-based diet and I'm still enjoying it.  I will have some seafood now and then, but for the most part I'm meat and dairy free.  It feels right for me and I'm not craving anything or feeling restricted at all.

I've discovered some wonderful recipes since switching to a plant-based diet over a year ago.  Of all the recipes, though, this one is my favorite.  I don't remember the original source, but I've revised the recipe so much that it doesn't really matter.  It's a little time consuming, chopping the veggies, but it's so worth the effort.  
I've made this dish more than any other in the past year....

One year ago I made the decision to TRY a vegan diet.  I honestly never expected to make it to this point....not even close.  I continue to be very surprised how easily I adapted and how much I enjoy the food.

I started my plant based diet eleven months ago and I'm still going strong, with no regrets.  I made it through Thanksgiving without eating turkey and it was much easier than I expected.  No temptation whatsoever.

Well, it's been 26 weeks now! I still haven't had so much as a bite of any meat.  I'm kind of shocked at my lack of interest or temptation.  True confession time:  I have had some shrimp in Chinese food and last weekend went completely crazy and had fried clams, scallops and haddock!

It's been twenty two weeks since I started my vegan adventure! I'm still enjoying the vegan diet....I haven't missed meat and there's been no temptation at all.  I did have a small piece of fish recently, because it was caught on Zack's first fishing trip and he brought it home to us.

It's been eleven weeks since I started my vegan adventure!I can't believe how easy it's been giving up meat and how much I'm enjoying the food!
I doubt I could have pulled this off without internet access to so many great vegan recipe sites.  Finding recipes takes time, something that most people don't have.  Shopping and cooking for a new diet is more time consuming at first too....it's much faster to throw together meals you are used to making.  Some people use a lack of time as their excuse for not eating better.  Don't let this stop you....it's just a matter of creating … (26 comments)

Vegan Pancakes I totally revised a pancake recipe I've enjoyed for many years...still delicious...but now they are much healthier!
These pancakes are dairy free, oil free and the best part is...you won't know the difference!

My vegan adventure started 6 weeks ago.
 I no longer eat meat (including fish), eggs, or dairy.   
The question I hear most often is "what do you eat?"Well...Unlike many vegans, I don't eat tofu or other soy products.  I don't eat meat and cheese substitutes (faux beef/chicken, non-dairy cheese).  
I'm eating fruit, vegetables, whole grain bread, rice and pasta, beans, nuts, and  lentils.  It may not sound too exciting, but the food has been really good!  It's been fun shaking it up and trying new things.
