recipes: Rum Cake Filled With Memories - 01/09/09 06:49 AM
When I was a little girl, growing up in East Texas, there were many events where bringing food was simply "the thing to do".  Since my mother was a preacher's wife, it was even more mandatory that she do so.  One of her favorite standbys was a rum cake (using rum flavoring instead of actual rum, of course!).  This is one of my fond memories of childhood, but somehow I'd never tried to make one myself.
This New Year's, I decided I wanted to do something a little bit different, so I go online and started hunting.  Finally, I found the … (7 comments)

recipes: Tex-Mex Chicken Soup - 02/14/08 07:59 AM
This is another of my quick and easy recipes, chicken soup with a kick for those cold winter nights when you come in tired and chilled from a long day of showing properties and want something restorative.  No muss, no fuss, if you use already-cooked chicken, either home-cooked (I cook up chicken and store it in zip-locs in the freezer for easy use) or bought at the store.
3 cups cooked chicken, chopped15 1/2 ounces great northern beans, canned16 ounces salsa (mild, medium, or hot, your preference)3 cups low sodium chicken broth1 teaspoon cumin

recipes: Thanksgiving Repast Meltdown - 11/23/07 04:11 AM
I may not eat for days.  And days and days.  (Except gumbo tomorrow - it's a tradition and required.)  Even the critters got extra goodies.  (And this morning J.D. and Joey got the end trimmings from the andouille sausage and are convinced that those are the Best Dog Cookies Ever and, please, ma'am, could I have some more?)
This year, instead of running around nuts in the kitchen and having everyone to our house, we gathered at my son's house in Austin.  We provided a few dishes; he cooked the turkey and some side dishes, our daughter and her SO brought … (6 comments)

recipes: Thanksgiving Leftovers Recipe Challenge! - 11/16/07 04:53 AM
With the holidays upon us, we're all sharing recipes for holiday goodies, planning our Thanksgiving, Christmas, and New Year's Day dinners, and basically immersing ourselves in visions of sugarplums.
However, after that turkey is roasted and hit by the plague of locusts we call our best beloved family, we are faced with the leftovers.  What to do with leftover turkey to make it interesting to those same locusts who now are not all that sure they can look at turkey again in their lifetimes?  I have a couple of solutions that have become traditions in our family (no, not turkey hash), … (3 comments)

recipes: Mexicali Pork Chops With Black Beans - 06/29/07 04:39 AM

This is a recipe that I've used often in my cheffing, and on days when I come home too tired to think about what to cook.  Everything but the cilantro and the sour cream is something that is in the pantry or freezer, and I usually have some of those on hand.  Enjoy!

recipes: Recipe Resource and Challenge - 05/05/07 03:35 AM
We're all sometimes looking for a particular recipe - one we loved long ago but lost, one that we had at a restaurant and would love to replicate, something perfect for an open house or to take to a potluck.  We can use the search feature here and we can use google, of course (google is your friend!), but sometimes that turns up dry, and sometimes it just helps to have fellow foodies search their cookbooks or recipe files.
So, this is the place to ask for help in finding that lost or sought recipe.  Simply put a comment here with your … (24 comments)

recipes: Awesome Oatmeal Cookies - 03/20/07 01:36 PM
This is my variation of the traditional oatmeal cookie recipe from the Quaker Oats box lid.  I took their recipe and played with it a bit.  This cookies are not only awesome, they have a tendency to disappear.  Great (and memorable!) for open houses or just to take to the office.  It's important to use golden raisins; regular dark raisins are good but have a different effect and don't appear to have the same awesome effect.  (I don't recommend leaving them at home because, like I said, they have a tendency to disappear and all rumors to the contrary, cookies that … (3 comments)

recipes: Baked Salmon With Creamy Onion Sauce - 02/25/07 08:15 AM
This is a quick and elegant dish when you come home from a hard day listing houses and realize (or learn!) that you have dinner guests coming.  Served with a fresh salad and a lightly steamed and seasoned vegetable of your choice, a loaf of crusty bread, and some white wine, a sorbet out of the freezer for dessert, and you're good to go!

2 tablespoons light mayonnaise
1 tablespoon chopped onion
1 tablespoon capers
1/4 teaspoon salt

recipes: Not Yo Mama's Banana Pudding - 01/02/07 02:13 PM
This is a special recipe for when you want to make a REAL impression with a dessert.  Be prepared to be asked if you're bringing it to any occasion if you ever bring it just once.  You WILL be remembered!  Is it healthy?  Not hardly!  But it is VERY healthy for your soul!

recipes: New Year's Traditions - 12/31/06 03:36 PM
I'm not staying up to see the New Year in . . . I'm staying up late cooking the black-eyed peas for tomorrow.  For Christmas, I got one of the things on my Amazon Wishlist - The Evolution of Cajun and Creole Cooking, by Jim  Fosse - and it's every bit as wonderful as I thought it would be.  So, instead of making my traditional Hoppin' John for New Year's Eve black-eyed pea good luck, I'm making a recipe out of this book for Cajun Blackeyed Peas.  Like the recipe for Cajun Vegetable Soup, it starts out with LOTS of meat - … (11 comments)

recipes: French Onion Pot Roast - 12/05/06 08:48 AM
A quick and easy way to "cheat" when you know you're going to have a long week and not much time to cook - fix this on the weekend and then serve later in the week with microwaved "baked" potatoes, a green salad, and a glass of good merlot, or make into scrumptious sandwiches, or with a little more time, make "stew from the cold roast" (another Shaker recipe I'll post sometime).

recipes: Sleepytime Chicken - 12/01/06 02:38 PM
This recipe is from an old cookbook I have called The Working Mother's Cookbook (the original printing), and is so-named because you can put the chicken in the marinade at night and with only a few minutes work the next evening, have a dinner fit for company.

This one you can prepare a bunch of ribeyes, put them in individual freezer ziplocs with some marinade, throw in the freezer, and later pull out as many as you need, thaw, and cook.  They not only freeze well, freezing makes them even better!
