I don't know about you, but I seem to have the worst time finding new and good restaurants.
Fortunately I found one in Westminster at 120th, just east of Federal Pkwy.
It's called Costa Vida.
It's a franchise whose website says that they were inspired by the food from the Blue Coast of Baja Mexico. The menu includes appetizers like Chips & Queso ($3.99), Quesadilla ($6.99) and Costa Vida Nachos ($6.99) (the nachos btw are great, and a filling meal for me, and they'll even just put beans and rice on them instead of meat if you want).
Entrees include a variety of Enchiladas (the cheese enchiladas are great!), Salads, Big Kahuna Burritos, Tacos and a kids menu. Dessert includes something called Tres Leches - although I have no idea what that is, Key Lime Pie, Flan and tasty looking ice cream bars (although I have to admit I've yet to try them).
AND one of the most important parts - the staff are extremely friendly and efficient!
Costa Vida is located in the new shopping/restaurant center that is being built at 120th and Federal in Westminster. The Country Club Highlands homes are being built right next door with low-maintenance patio homes in the Westminster subdivision starting from the high $400's.
